Vegan healthy coconut balls

A guilt-free dessert that is easy to make and delicious. I served these at a cocktail party the other night and the people loved it(and they were not vegan). It has become the new healthy dessert that I constantly eat whenever I need something sweet.


Here is the recipe:

Ingredients

-1 cup of oats

-1/3 cup of raisins

-1/2 tsp of salt

-1/2 cup of dried figs

-1 cup of dates

-8 tablespoons of shredded coconut

-4 tablespoons of coconut oil

-1/2 cup of honey

-3 tablespoons of vanilla extract

-4 tablespoons of shredded coconut



Instructions:

In a blender combine the oats, raisins, salt, dried figs, dates and shredded coconut. You can also use a hand mixer but I would advise a blender. The mixture will be a bit hard to combine and it is good to stop and scrape down the sides with a spatula, you do not want big chunks of ingredients in the dough. On a double boiler mix the honey, vanilla and coconut oil. You want the coconut oil to be completely melted. Add the wet mixture to the dry mixture and mix. Place in a bowl and put it in the freezer for around 1 hour. After it has cooled down and gotten hard place around 2/3 cup of shredded coconut in a bowl or plate. Take your dough and form 1 tsp, 1/2 tsp balls and roll it in the coconut. What you can also do is place the balls in melted dark chocolate and then roll it in coconut. But many people prefer it without chocolate because they say that with chocolate it is too heavy and just too much. When the balls are done place them in the refrigerator and enjoy.
