Baked sweet potato and sour cream recipe

I think this recipe actually came from my family seeing something similar at some kind of a food market a couple of years ago and ever since then my mom started making this recipe and then I started making it but I am not even 100% sure that that is where we got the recipe. However what I do know is that it is delicious.


For 1 portion

-1 sweet potato

-a couple of tablespoon of sour cream (I am never exact when it comes to these measurements)

-a couple of tablespoons of grated cheese (I am never exact when it comes to these measurements)

- a couple of small slices bacon(I am never exact when it comes to these measurements)

Instructions:

You want to wash your sweet potatoes. Poke holes evenly around your sweet potato with a fork. Place your sweet potatoes on a pan and bake for 50-60 min at 200 Celsius/400 F. When done baking cut in half(they might be really hot so be careful) and place the cheese. Bake for another 5 min and in the meantime cook the bacon. When the sweet potatoes are done go ahead and place the sour cream and bacon on top and enjoy.
