Chicken Karahi

Maybe my favorite dish I made with Amina. Chicken cooked many times is a bit dry but that is not the case with chicken karahi. It has the amazing flavor of the tomato sauce with the spices well incorporated into it.


Here is the recipe

Ingredients:

-1 tablespoon of butter clarified butter

-6 chicken thighs with bones

-2 green pepper

-1 clove of garlic

-3 tsp of cumin

-1 bottle of passata ( approx. 690 grams)

-3 fresh tomato

-2 tsp salt

-2 tsp pepper

-1/2 tsp of red chilli powder

-2 tsp of turmeric

-1 tsp coriander pepper

-1 tsp dried coriander

-1 tsp onion seed


Instructions:

Place the clarified butter in a large pan and place the chicken in. Add the pepper and keep on stirring flipping over the chicken. Like Amina said the bones in the chicken give more flavor. Add the garlic, cumin, pasata and the rest of the ingredients and stir well while the chicken is cooking.


One of the great things about turmeric is that it's anti inflammatory
