Coffee cake

I got this recipe from my grandma, when I asked her where she found it she said she didn't remember because it had been ages. I think she maybe even got it 40 years ago, quick reminder(this cake does not actually contain coffee!!!) That's a comment for all those people who hate drinking coffee. It is a nice, moist and sweet cake to eat for breakfast or maybe with a cup of coffee to start of your day.

Here is the recipe:

Ingredients

-4 eggs

-1 cup of butter

-1 1/2 cup of sugar

-3 cups of flour

-3 tsp of baking powder

-1/4 tsp of salt

-1 cup of milk

-1 tsp of vanilla

For the sugar filling

-1/2 cup of sugar

-1 Tbs of cinnamon

-1 1/2 Tbs of cocoa powder

Instructions:

Take out 2 large bowls and separate your eggs, having the egg whites in one bowl and the egg yolks in the other. Mix the butter, sugar with the egg yolks. I would recommend using an electric mixer because you do want your ingredients to be incorporated really well for the cake to taste better.

Set aside and get another large bowl and whisk the flour, salt, and baking powder.


Make the wet ingredients by mixing the milk and vanilla in a small bowl. Alternate the dry-wet mixture with the egg yolk mixture. It does not have to be too precise, what is important is that you do not dump all of the dry ingredients or wet ingredients at once. Scrap the sides of your bowl with a spatula to make sure all of the flour gets in.

Set aside and beat your egg whites until they are nice and fluffy. When it comes to baking you should never skip out on a step because every detail is important and will have an impact on your baked good. I do have to mention however that having the egg whites fluffy is the most crucial part. My grandma told me that many people make the recipe and forget the beat the egg whites and end up being disappointed because the cake does not taste very good.

After your egg whites are fluffy fold them in the egg yolk mixture. In a small bowl make the filling mixture by mixing the sugar, cinnamon and cocoa powder with a spoon. Alternate the cake batter with the sugar mixture in a greased and floured bundt cake.

Bake at 375 F for 1 hour. When done baking let it cool for at least an hour and then use a knife to scrap the sides and place a plate under your bundt cake and flip it over. Your cake should come out nicely. Let it cool for a little more and then enjoy.
