Green tomato cake

Until this week I had never heard of a green tomato cake. I say it is unheard of fall treat that needs to be made and eaten more often. My grandma taught me how to make it and when I asked her where she got the recipe she said she did not know, she randomly picked it out of somewhere and could not tell me where she had gotten it.

Here is the recipe:

For the cake

-1 cup of softened butter

-2 1/2 cup of sugar

-3 large eggs

-3 cups of all purpose flour

-1 1/4 tsp of ground cinnamon

-1 tsp of baking powder

-1 tsp of salt

-1/2 tsp of ground nutmeg

-2 1/2 cups diced green tomatoes

-1 cup of golden raisins

-1 cup of chopped walnuts

Preheat oven to 350F. Grease and flour a 12-cup bundt pan. Beat butter and sugar with an electric mixer until creamy. Add eggs, one at a time, beating well after each addition. In a medium bowl, combine flour, cinnamon, baking powder, salt, and nutmeg. Gradually add to butter mixture, beating well. (batter will be stiff). Stir in tomatoes, raisins, and walnuts. Spoon batter into prepared pan. bake 1 hour and 10 to 15 min, or until a tester inserted in center comes out clean. Let cool in pan on wire rack for 10 minutes. Remove from pan and let cool completely. Spoon Browned butter icing over cake.

For the browned butter icing

-1/2 cup butter

-1 cup of confectioner's sugar

In a medium saucepan over low heat, melt butter. Cook 6 to 8 minutes, or until butter is lightly browned. Whisk in confectioners sugar until smooth.
