Pancake recipe

Like I said before this is not my own recipe, it's Jamie Olivers"American pancake recipe". I do think it is worth sharing because I feel like not enough people know about these pancakes. They are amazing, super fluffy but not too fluffy, tasteful, sweet but not too sweet. The special trick to making them so fluffy is to whip the egg whites. And I think it is enough to say that everyone likes some fluffy pancakes to start off their day.

Here is the recipe

Ingredients:

-3 eggs

-115 grams of flour

-140 ml of milk

-1 heaping tsp of baking powder

-pinch of salt

-tablespoon of unsalted butter

Instructions:

Take out 2 large bowls and separate your eggs. Add the flour, baking powder and milk into the egg yolks. Mix well with a spatula. Do not overmix, lumps in the dough are actually very good and will make the pancakes taste better in the end. Add the salt to the egg whites and whisk very well until white and fluffy. The trick to making sure if your egg whites are mixed enough is to flip your bowl over. If the egg whites fall down or move that means you have not whipped them enough. If they stay in place and do not move it means that it is ready. Fold in the egg whites in the egg yolk. Folding is not the same as mixing. And then you want to place some of the dough on the preheated oven, around 4 tablespoons depending on how big you like your pancakes. When you see bubbles forming and popping you want to flip your pancakes over and let them cook for around 1 min on the other side. Then you can take them off and serve them with whatever you like.
